CHOCOLATE CAKE

Every time if there is any birthday or celebration we order a cake to celebrate that with sweets. whenever we order cake the first thought comes in our head is about chocolate cake. there is a wrong concept about people that baking a cake is very difficult, but the truth is it is a very simple dish, you just have to add a proper amount of ingredients and should a decent amount of baking knowledge. if you have this knowledge then boom you are ready to cook a cake.

INGREDIENTS
       For the Cake:
  • 2 eggs room temperature

  • 2 cups powdered sugar

  • 1/2 cup cocoa powder

  • 1 teaspoon instant coffee powder

  • 1/2 teaspoon salt

  • 1 cup hot water

  • 2 ½ cups all-purpose flour

  • 2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 1 cup vegetable oil

  • 1 tablespoon pure vanilla extract
  • For the Frosting:

  • 3  tbsp butter

  • 6 cups confectioner's/powdered sugar

  • 3/4 cup of dark chocolate

  • 1 tablespoon pure vanilla extract

  • 1/4 cups of milk

  • 1 cup cream

  • 1/2 cup sugar syrup
tip: you can even make this cake without frosting, just frosting makes the cake more presentable

INSTRUCTIONS
For the Cake:
  1. Preheat oven to 350 degrees and spray 3 9 inch round pans with non-stick baking spray.
  2. Add eggs and sugar to the bowl of your stand mixer and beat on high speed for 2-3 minutes, or else you can whisk the batter for 10 mins.
  3. While mixture beats, add cocoa powder, instant coffee powder and salt to hot water. Add to eggs and sugar.
  4. Next, slow down the mixer and add flour, baking soda, and baking powder then add vegetable oil, buttermilk and vanilla extract to the mixer and beat until just combined. The batter will be sort of thin but this is normal.
  5. Evenly add cake batter to all three pans and bake for 22-25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow resting for 10 minutes before removing from pans to cool completely.
For the Frosting:
  1. Add butter, confectioner's sugar , melted dark chocolate, and cream to a bowl of a mixer and mix on high speed until smooth.
  2. Lastly, add in vanilla extract and milk until frosting is fluffy and smooth.
  3. cut the cake into 3 slices one above the other, pat the surface of the cake with sugar syrup to make it soft and tender.
  4. Frost each layer of cake with frosting then frost the entire cake and serve
important tips: The secret to making an outstanding homemade chocolate frosting is to make it fluffy. The key to fluffy frosting is to continue to mix the ingredients (butter, confectioner’s sugar, dark chocolate, cream and vanilla extract) on high speed. This will ensure your chocolate frosting is fluffy.

another way of baking : 
  • you can even bake the cake inside a pressure cooker, the result will be the same as the oven.
  • for baking in a pressure cooker first, you should add rock salt into the cooker and preheat on a medium flame for 10 mins
  • add the batter in the greased container inside the cooker, close the lid but do not add whistle into it
  • bake it for 45 - 50 mins or till it done
  • for checking the cake if it is done or not, take a toothpick and poke it inside the cake, if the cake is cooked properly, the toothpick will come out without any batter on it.
  • top it with some chopped almonds and powdered sugar
